Small-Town Summers
Every Fourth of July seems to follow the same familiar rhythm: grills smoking by mid-afternoon, folding chairs lining the driveway before fireworks begin, and someone inevitably asking if the food is ready yet. In Oklahoma, summer gatherings are rarely fancy, but they’re always full of flavor, family, and timeless traditions.
This is my first summer living back in my hometown of Choctaw, Oklahoma, after several years, and I’ve found my new favorite summer activity is browsing the local vendors and farmer’s market at Friday Nights in the Park held at Choctaw Creek. Between the homemade jams, pickled veggies, and baked goods, there’s always something that catches my eye. This past Friday, one item came home with me: pickled green tomatoes.
The Unexpected Cookout Ingredient
Salty, tangy, and a little spicy, these pickled green tomatoes were a first for me. This old-fashioned southern staple deserves a comeback, especially during summer cookouts. So, this Fourth of July, I am using them in a recipe that feels both festive and local: red, white, and blue BBQ Sliders (with pickled green tomatoes).
The pickled tomatoes add the perfect bright and tangy bite to smoky barbecue, making these sliders feel like an Oklahoma-style upgrade to a classic holiday favorite.

Red, White, & Blue BBQ Sliders with Pickled Green Tomatoes
Ingredients
- Slider buns, toasted
- Pulled pork or shredded BBQ chicken
- Red onion slices
- White cheddar or pepper jack cheese slices
- Pickled green tomatoes
- BBQ sauce of your choice
- Optional: blueberries on the side for a festive touch
Directions
Layer pulled pork or BBQ chicken onto toasted slider buns, top with cheese slices, red onion, and slices of pickled green tomatoes. Serve warm with chips, baked beans, or fresh fruit for an easy Fourth of July meal.
