As someone who hates meal prep and never wants to eat on Friday what I prepped on Sunday, I was shocked to find a salad that I have been gladly enjoying for the past four weeks! You have to give this one a try.
There are two secret ingredients for this salad: the dressing and the toppings. Everything else is interchangeable making it perfect for a budget-friendly meal.
Grab these two items from the store: Sesame Ginger dressing and wonton crisps. For your salad, simply choose any mix of the following and omit what you don’t like:
- cucumber
- green onion
- shredded carrots
- shredded red cabbage
- sugar snap peas
- romaine lettuce or your favorite greens
- avocado
- slivered almonds
- couscous (cook in bone broth for added protein!)
- feta cheese
- grilled chicken or tofu
- cilantro
Simply chop/shred all of your ingredients, cover with the dressing, and put in containers! Add the wonton crisps when you’re ready to eat.
