When school is back in session and the schedules start to fill up, that’s when survival mode kicks in and dinner really stresses me out. Throw in youth sports and it’s next-level Stressville. But I live for the chaos of the “bleacher years”! And while I don’t feel shame in letting that chaos send us through Chick-fil-A occasionally, those occasions have gotten really expensive.

I have always been a meal prepper, but I haven’t always been this busy! Since coordinating the chaos and keeping us all fed relies solely on me, I have to be proactive. Here’s how I prioritize budget-friendly, make-ahead meals and snacks that keep my family fueled without adding to the chaos or breaking the bank.

Crockpot Meals

Our nights and weekends might be unpredictable, but dinner doesn’t have to be!

Crockpot meals are the real MVP! Not only do they eliminate the 5 p.m. scramble, but they dirty little to no dishes. I can prep my crockpot meal the night before, turn it on before we run out the door in the morning, and have dinner ready and waiting for us!

My Go-To Crockpot Meals (Healthy, High-Protein, & Budget-Friendly)

  • Shredded Fiesta Chicken
    • Chicken breast + rotel + black beans + corn + taco seasoning
    • Use for tacos, bowls, wraps, salads, or even eaten straight from a container between games
  • Slow Cooker BBQ Pulled Chicken
    • Chicken breast + barbecue sauce + Italian dressing
    • Serve on whole grain buns, in corn tortilla tacos, or over microwaveable rice
    • Great for leftovers all week
  • Crockpot Teriyaki Chicken
    • Chicken breast + teriyaki sauce + balsamic vinegar + garlic & onion powder
    • Pair with frozen stir-fry veggies and rice for a quick bowl

The Rise of “Car Meals”

You’ve seen it all over TikTok—parents are using heated lunch boxes and mini crockpots to serve real meals on the go. And while I don’t love eating in the car, I’ll do just about anything to avoid feeding my 6-year-old past his bedtime!

Instead of hitting the drive-thru, try packing a hot meal before leaving, letting it warm during practice, and eating on the drive home.

Best meals for on-the-go eating:

  • Rice bowls (chicken, beef, or tofu + veggies)
  • Pasta with protein (holds heat well)
  • Quesadilla wedges
  • Breakfast-for-dinner burritos

Keep it simple: One container, minimal mess, easy to hold. For us, that means no meal that requires KETCHUP!

It never fails: my kid’s car door slams shut and it’s “Do you have any snacks?” And this is where we almost always fail if we don’t plan ahead!

Cut your hangry little humans off at the pass with quick, portable, protein-packed options that keep them from hitting that after-school or post-practice meltdown.

I keep a “snack bin” in my car stocked with shelf-stable options like Goldfish, graham crackers, and popcorn so we’re not buying overpriced, sugar-filled gas-station snacks. I also keep an over-the-door shoe organizer in my pantry packed full of my kids’ favorite, mom-approved snacks, so I don’t have to answer the dreaded question: “Can I have this?” If it’s on the door, you can have it!

Budget-Friendly Wins That Add Up

Sports seasons already come with enough expenses; food shouldn’t double the cost.

Here’s how I keep it under control:

  • Buy proteins in bulk and freeze portions (a rotisserie chicken hates to see me coming)
  • Use frozen veggies (same nutrition, less waste)
  • Rotate 3–4 core meals each week instead of reinventing the wheel
  • Plan meals that stretch and travel well (tacos, bowls, wraps)
  • Keep a healthy snack surplus at home and in the car to avoid impulsive snack stops

You can’t win ‘em all. Some nights we eat at home. Some nights we eat in the car. And some nights we hit up Chick-fil-A. But, a little preparation makes our chaotic evenings easier, healthier, and a little more intentional.
