The Instant Pot: Our Family’s Top 5 Favorite Recipes

The Instant Pot has stolen my heart. I drank the kool-aid. I jumped all in. I am officially a fan and follower.

I’ve always loved to cook. I stood in a chair as a kid to reach the mixing bowl and loved trying out new recipes as I got older and could maneuver the kitchen independently. There’s just something about working so hard to create a meal or dessert that makes people happy. Chopping with big knives, using all the bowls in the kitchen, and making a mess that takes an hour to clean. It fills you with joy and pride.

But there’s also something about convenience, ease, and efficiency. Especially now that I am a mom with a very busy schedule and the task of coming up with meals that all 6 people in our family will actually eat! Enter the Instant Pot. I had been eyeing it for about a year before I actually got one. I saw so many people post about this new and improved pressure cooker on Facebook and rave about how easy their lives had become. I was a bit hesitant, not knowing if I wanted to fork out the money to try something that may or may not work for my family. So, when my mother-in-law surprised me with an Instant Pot for Christmas, I was ecstatic! I couldn’t wait to try it out and see if it really was the miracle-working machine that so many of my friends claimed it was.

I can officially report that it is, indeed, a beautiful unicorn with magical powers to transform mealtime. My dish consumption has drastically decreased, my messes are minimal, my time is used more efficiently, and the day is saved when I wait until the last minute to decide what we are having for dinner! There has not been one recipe that I’ve tried that my whole family has not loved! This is HUGE considering that my husband and my two youngest boys are not the most adventurous eaters.
