4 Easy Christmas Morning Breakfast Ideas

I always want Christmas morning to be magical and, well, delicious. I like to serve my family (and myself!) something we don’t always have for breakfast. Something special. I also don’t want to spend the whole morning in the kitchen, missing out on the festivities. Over the last few years, I have come up with some dishes that fit the bill. These can even be prepped the night before. Serve these with a decent fruit selection, and you’ll have something everyone will eat.

 

Christmas Morning Quiche

Christmas Morning Quiche

Ingredients
– 1 premade pie shell
– 3 eggs, beaten
– 1 cup milk
– 2 cups of shredded cheese. I use cheddar or a mix of what I already have on hand. 
– 3/4 cup chopped vegetable(s). Spinach and onion are pictured here.
– 3/4 cup cooked chopped meat. Ham is pictured here.
– Dash of salt and pepper

Directions:

1.  Mix all ingredients and pour into the pie shell. 
2. Bake at 350 for 45-60 minutes, until center is firm.

 

 

Overnight French Toast

Overnight French Toast

Ingredients
– 1/3 cup melted butter
– 2/3 cup brown sugar
– 1 loaf brioche bread cut into 1-inch slices
– 8 beaten eggs
– 1 cup milk
– 1 tsp vanilla
– Dash of salt and cinnamon 
– 1/2 cup diced fruit and/or nuts 
– Syrup and powdered sugar for topping

Directions:
1. Mix the butter and brown sugar. Then pour over the bottom of a 9×13 pan. Arrange slices of bread on top of the butter/sugar mixture.
2. Mix the eggs, milk, vanilla, salt, and cinnamon. Pour the egg mixture evenly over the slices of bread. 
3. Cover with plastic wrap and refrigerate for 6-12 hours.
4. Set the pan out for at least 15 minutes while the oven preheats to 350. 
5. Sprinkle diced fruit and nuts over the bread. Pictured here are diced almonds and pears.
6. Bake for 30 minutes until bread is lightly browned and cooked through. 
6. Serve warm with maple syrup and powdered sugar. 

 

 

Bagels and Smoked Salmon

Bagels and Smoked Salmon

Ingredients
– 1 package good quality savory bagels.
– Slices of thinly smoked salmon. You can even find this at Aldi!
– Slices of cucumber
– Whipped cream cheese
– Capers
– Slices of red onion

Directions:
1.  Toast the bagels.
2. Spread all ingredients out on a serving tray.
3. Top bagels with desired ingredients. 

 

Grandma Ada’s Apple Pumpkin Streusel Muffins

Ingredients
– 2 1/2 cups flour
– 2 cups of sugar
– 1 Tbsp pumpkin pie spice. I just use cinnamon when I don’t have this on hand.
– 1 tsp baking soda
– 1/2 tsp salt
– 2 eggs, beaten lightly
– 1 cup pumpkin puree
– 1/2 cup oil
– 2 cups finely chopped apples

Streusel Topping
– 4 Tbsp Flour
– 1/2 cup sugar
– 1 tsp cinnamon
– 6-8 tsp of butter, mixed till crumbly

Directions:

1. In a large bowl, combine the first 5 (dry) ingredients. Set aside.
2. In a medium bowl, combine the next 4 ingredients: eggs, pumpkin, oil, and apples.
3. Stir apple mixture into the dry ingredient bowl.
4. Spoon into muffin pans, filling 2/3 of the way. Sprinkle with streusel topping.
5. Bake at 350 for 35-40 minutes.
